Established in 2019, The Dublin Liberties Distillery aim to keep the spirit and fire of The Liberties alive.
The Distillery
Nestled in the heart of Dublin’s historic distilling district, the Dublin Liberties Distillery stands in a place where every stone tells a story. The Liberties is layered with history, built on the grit and graft of working-class Dublin. Whether you were high-born or hard-up, whether your draw was whiskey, mischief, or something in between, everyone wanted to be in the Liberties.
By the late 1800s and early 1900s, it had become a magnet for distillers, brewers, creatives, rebels, rascals, and raconteurs. It was a place without rules—only spirit, story, and the scent of something brewing.
The building we call home dates to the 1700s—a stone-and-brick survivor of the Liberties’ working past. Once a mill, then a tannery dealing in rabbit skins, it’s soaked in the sweat and craft of generations. Today, as the Liberties rises again, this old building steps forward with it—echoing a golden age of Dublin whiskey-making that’s finding its fire once more on the world stage.
The Liberties
Once known simply as ‘Hell’, this wild and wayward quarter of old Dublin stood just outside the city walls and well outside the rules. Cobbled streets brimmed with mayhem, mystery, and the kind of characters who didn’t ask permission. But it wasn’t all chaos. The Liberties was a hive of industry. Distilleries, weaving mills, tanneries, forges, printworks, and plenty of unlicensed taverns all thrived here. Everyone from street traders to high society rubbed shoulders in its smoky backrooms.
At the Dublin Liberties Distillery, we honour that rich and unruly past. Our storytelling is steeped in local legend, and our whiskey range draws its name and spirit from the tales that shaped this place.
The Process

Production Scale
The Dublin Liberties Distillery features a 2-ton mash tun, with the capacity to hold 100,000 liters of wash in its fermentation vessels. Our triple distillation setup includes a 10,000-litre wash still, and 6,000-litre intermediate and spirit stills. Altogether, we have the capability to produce over 500,000 liters of new make spirit annually.

Ingredients & Process
We use 100% Irish malt, sourced from local farmers across Ireland, and incorporate water from our own well as part of the mash. Combined with carefully selected yeast strains, we craft a spirit that forms the foundation of our exceptional new make spirit.

Maturation & Casks
Our whiskey matures in specially selected casks, carefully overseen by our dedicated team until it’s ready to be enjoyed. While Irish whiskey must legally age for a minimum of three years, our premium expressions mature for much longer and are finished in a variety of cask types to develop rich, complex character.

Product Range
The Dublin Liberties Irish Whiskey range is inspired by the stories and streets of the Liberties. Since opening our doors in 2019, we’ve set out to keep its spirit and fire alive. From the liquid in the bottle to the stone in the walls, everything we do draws from the rich folklore of the area.
This range isn’t just whiskey. It’s a way to stay rooted in the heart of Dublin. It helps us build a deeper connection to the city and share in its story—one that’s raw, real, and unmistakably ours. All from our home on Mill Street, right where Irish whiskey was born.

Supporting Local Talent
Inside our distillery, we’re proud to support local talent through events and collaborations with artists, musicians, and creatives who call the Liberties home. Our bar space isn’t just for whiskey—it’s a platform for expression.
The Liberties has always been a place where creativity thrived. From poets to painters, buskers to storytellers, it’s part of the fabric here. At the Dublin Liberties Distillery, we’re committed to keeping that creative spirit alive and giving it room to grow.
Sustainability
Sustainability is at the heart of our operations at The Dublin Liberties Distillery. We minimize waste by returning all spent grains and pot ale to local farms for use as animal feed, supporting a circular and community-focused approach. Our distillation process also incorporates heat recovery systems to maximize energy efficiency and reduce our environmental impact. Additionally, the distillery is equipped with energy-efficient LED lighting and motion sensors, helping to lower overall energy consumption while maintaining a modern, low-impact environment.
